On Sunday 26 April, we sat down for easily the best meals we have ever had at the Oyster Club. Chef James Wayman designed an exquisite menu to highlight the unique nature and flavors of both the Fisher's Island oysters and our Mulefoot hog. The oysters were nice and briny, the spaghetti was heavenly (some of us would have happily had more), the sausage caused ohs and ahs from everyone and the accompanying beets were fabulous, and then, the pork loin was perfection. Even those claiming not have room for dessert emptied their bowls! Conversation around the table was entertaining, but halted with the arrival of each dish since we all know not to talk with our mouths full. One of the highlights of the evening was the enthusiasm James showed for our pork. He positively glowed in his praise! Owner Dan Meiser was the consummate host and once again proved why we count him among our friends.
